Lamb Koftas on Cous Cous

Ingredients

8 x lamb koftas (our koftas are made with gluten free ingredients)

1 x packet of your favourite cous cous – you can even use gluten free cous cous to create a gluten free meal

1 x lemon – juice it first and then zest the skin

1 x tsp crushed garlic

1 x onion very finely diced

500 ml or 1L good quality chicken stock

1 x tub of tzatziki dip (or greek yoghurt if you prefer)

salt and pepper to taste

drizzle of olive oil for frying


Methods

Cut the koftas into half or thirds according to your preference

Prepare the cous cous according to packet directions (if the packet requires water substitute for chicken stock)

Whilst the cous cous is cooking, fry the kofta pieces in a pan – remove and set aside

Clean the frying pan and add a drizzle of olive oil, the crushed garlic and lemon zest and fry very lightly – just until fragrant – mix with with the lemon juice through the cous cous

Serve the cous cous in a bowl with the kofta pieces on top and a drizzle with the tzatziki
